Planning a Carte Blanche date is always exciting; new restaurants, cooking classes and food events.

I decided to treat my date to something a little...well...cheesy. What do you get when you combine several glasses of wine, rubber gloves and cheese curd?

Get your mind out of the gutter...

Mozzerella!

Courtesy of a basic cheesemaking class at Brick NYC. The class convenes in the restaurant basement where students of various ages and backgrounds get hands-on experience stretching gooey deliciousness.  Students were given mozzerella curd & boiling salted water. Our teacher, Chef Gina instructed us to break up the curd in our bowls. I tasted my curd, which basically tasted like hard, unsalted cheese. 

While Chef gave a history of cheesemaking, we gently massaged our curds in the hot water. 

Once the curds are pliable, we smooshed it into a mass and stretched it until it became a ball of warm, delicious mozzerella. 

Several glasses of moscato later, we enjoyed our creations on bruschetta.
